Oeste is olive oil made with attention to what matters: the fruit, the land, the harvest and the process. Produced to preserve the character of the olive, it’s fresh, expressive and made to be used generously, at the table, in the kitchen, every day.

Olive oil is simple, but never quite the same. Its character shifts with the variety of olive, the soil, the climate, the moment of harvest and the way it is pressed. Bitter, peppery, grassy or soft, a good oil carries the trace of where it comes from, and the choices made along the way.

Our Groves

Jaén, Andalusia, Southern Spain

We begin with the land. Rain is scarce in southern, Spain. It drains through calcareous soil. And the tree that struggles for water concentrates its energy on fruit.

Olives from Andalusia are small and loaded with antioxidants, a source of flavour, stability and good health.

Our Process

We continue to perfect our process. Our harvests are chosen by sommeliers, experts in complex tastes and the demands of the table. Then, cold pressing and careful bottling preserves the special qualities of the olives.

Sauté & Roast is an extra virgin olive oil that withstands cooking temperatures. Drizzle & Dress brings green spice in abundance to lift the other ingredients on your plate. Sip & Dose delivers antioxidants, vitamins and a sweet aroma with every drop.

Our Purpose

We end on your countertop. In most kitchens, there’s room for three precision oils: one for cooking, one for dressing, one for wellbeing. But we noticed food-lovers were caught between using a single monstrous bottle for everything or many tiny bottles, deployed at random. Our elegant solution was producing three specialist oils in the right quantities, crafted from the ground up.

Find out how family wisdom and food chemistry came together for a modern take on an ancient taste.

NO 1. Sauté & Roast
NO 1. SAUTÉ & ROAST Picual olives, selected for their rare ability to stand up to the heats of cooking without sacrificing taste or health benefits. An oil that underscores rather than overwhelms other ingredients.
NO 2. Drizzle & Dress
NO 2. DRIZZLE & DRESS Cornicabra olives harvested while still green for the intensely peppery flavour of an excellent drizzling oil.
Used raw as a dip or dressing, it brings a contrast that cuts through creamier flavours and lifts bolder ones.
NO 3. Sip & Dose
NO 3. SIP & DOSE Pressed from Royal de Cazorla olives, an extremely rare variety prized for its exceptional health benefits. Enjoy raw daily.
